Debut of Meat Sommelier Program

TAFER Hotels & Resorts, a leisure and hospitality company with a collection of award-winning hotels, luxury resorts, and boutique villas throughout Mexico’s most c oveted beach destinations—is excited to announce the debut of its dynamic Meat Sommelier program, which will be implemented brand-wide across TAFER’s signature steakhouse concepts Bocados Steak HouseKaruma and La Casona at select oceanfront properties. Similar to a well-trained wine sommelier, each gourmet restaurant will have a knowledgeable Meat Sommelier onsite at all times, who will be available to educate and guide diners through the intricacies behind the meat selection process.

TAFER’s Meat Sommeliers are carefully selected to ensure they are well versed in culinary knowledge, the meat selection, ageing and grilling process, the difference between USDA Choice, Prime and Wagyu meat grades, as well as HACAP and food handling requirements.

Steakhouse guests will be greeted by a dedicated Meat Sommelier who will walk diners through the evening’s specialty offerings in addition to the restaurant’s assortment of meat cuts via a “Butcher Map” which details the location of each corresponding cut on the cattle and explains its tenderness, percentage of fat which affects taste, and more. The Meat Sommelier will then delve into each cut’s individual features including taste and type, source location, aging, and different types of cattle breeds from Full Blood Wagyu Akaushi to Kurobuta pork, Angus, Intoku Grandmaster Akaushi Beef, among others.

Once a selection is made, the Meat Sommelier will suggest the appropriate cooking method for each particular cut and the meat will be artfully plated, accompanied by delicious sides and ideally paired with a decadent glass of red wine. 

Resort guests can now utilize the Meat Sommelier as part of TAFER’s Gourmet Culinary All-Inclusive Plan at Garza Blanca Resort & Spa Cancun’s Bocados Steak House. By the end of June, the program will also be implemented at Bocados Steak House at Hotel Mousai Puerto Vallarta and Garza Blanca Preserve Resort & Spa Puerto Vallarta, as well as at Villa del Palmar Cancun’s La Casona restaurant and Karuma located in the TierraLuna Gardens Puerto Vallarta (not part of the all-inclusive plan).
